Ossetian pies – the most important dish!

For many millennia, Ossetians have been baking their pies lit by tradition. Bake on weekdays and holidays. And round, ruddy pies with filling are always served on the table.

The names of pastries are completely different, depending on the filling:

Potatojyn – potatoes pie

Davojyn – Cake with Cherry and Cheese

Fydjin – Myasnaya pie

Nashijin – Pick and Brynza Pie

The baking process itself is not difficult, but still requires experience and a certain skill. Mostly in Ossetia – the baking of the pies is the lesson of the female and “poke hands in the dough” to a man in the dough is strictly prohibited.

Particularly tasty pies are baking with a thin layer of dough and a very juicy prepared filling, which should be many. Fat Ossetian pies – talk about not women’s experience.

In general, the general technology of preparing famous pies passes the same way throughout the country, although each hospitable housewife certainly brings her own highlight, which allows pastries to be “unique”.

To obtain successful pie, the high quality of yeast and white flour is of great importance, only in this case the dough will be delicate and elastic.

Ossetian pie potatojin

Potatoes will be filling the pie that can be supplemented with a feta cheese or any brine cheese, then the dish will come out aromatic and very juicy. Ossetian pie with such a filling is the most popular in the country and bake it in every house.

Ingredients for the test:

flour (white) – approximately 1 kg

Milk – 500 grams

sour cream (not fat) – 150 gr

yeast (stopped – dry) – 50 g

sunflower oil

Sugar, salt

Preparation of the Ossetian cake:

Mix flour and yeast, add warm milk, sugar, salt. Knead a not very cool dough and put in heat until it rises.

While the dough is suitable, boil the potatoes and make mashed potatoes, mix the prepared potatoes with cheese, sour cream and oil, salt the filling if necessary.

Divide the dough into pieces (with a fist) and roll it into a cake. Put the filling in the middle of each cake, assemble a bag and gently protrude the edges. Carefully patry the cake to become even. Make a hole in the center of baking so that steam comes out.

Shift the cake into the pan and grease with a beaten egg. Send the pie bake for 30 minutes. Glue with butter before serving. When the Ossetian pies are prepared, they turn out juicy and very tasty. The mouth -watering piece will be able to satisfy even the wildest male hunger!
