Vegetarian dolma “Lightness”

First, clean the potatoes and boil it to a state of readiness (about 20-30 minutes), meanwhile, are preparing grape leaves. Rinse them and put them for 5 minutes in hot water. Then they should be dry. Cleaning onions with carrots and cut into small pieces. Rinse green onions and mint leaves. Both onions and mint should be chopped. Using the grater, remove the zest from the lemon, squeeze the juice from the pulp.

In a pan, heat olive oil (2 st. l.). Fry the crushed onions and carrots in it (about 6 minutes). Add green beam and mint leaves to vegetables. Mix and immediately remove the pan from the fire.

We turn boiled potatoes in mashed potatoes with the addition of olive oil, salt and pepper. Moreover, mashed potatoes should be quite rude, not liquid.

Mix fried vegetables and greens with mashed potatoes. Add lemon zest to this mass (1 t. l.) and juice. If necessary, we set the resulting mixture.

We take a pan with low sides and spread the grape leaves at the bottom (4 pieces). In this case, the bottom of the pan should be completely closed. Those leaves that remain, lay out on the table with the side that is more brilliant. In each sheet we put the filling. Leaves need to be folded in the form of a convertible. Then we put our envelopes in the pan very tightly to each other. Pour them with 1 glass of hot water. Press our converters with a lid, which should be less than the diameter of the pan. If there is no such cover, you can use a plate. Leave on low heat for 40 minutes. Dolma is ready!
